These healthy alternative to the the Little Debbie oatmeal cream pie are sure to hit the spot. They are loaded with healthy ingredients, protein and fiber.

How to Make Vegan Cookie Dough

  1. Place all ingredients except for the raisins into a food processor and mix well. Chill for one hour. Shape into small cookie shapes. I used a mini muffin pan. Prepare enough to make both sides of the sandwich.

Make cashew cream

  • 3/4 cup cashews soaked in water for at least 8 hours or overnight

  • 1.5 Tbsp pure organic maple syrup

  • 1 Tbsp coconut oil melted

  • 1 Tbsp unsweetened almond milk

  • 1/2 tsp vanilla extract

  • pinch of salt

  1. Place all ingredients in a high speed blender or food processor. Mix well.

Out together your cookie and enjoy!!!
