Recipe Makeover- Lentil Stroganoff

Lentil Stroganoff 

 This was a favorite of mine growing up! I am excited for this recipe makeover! I hope you enjoy it! 

Dairy and Gluten free as always! 

1/2 diced onion 

1 tsp minced garlic

15 ounces sliced mushrooms 

1 container cooked lentils 

1 container broth of choice (I use bone broth for added protein)

4- 6 Tbsp dairy free Greek yogurt ( I use Kitehill)

1/4 cup chopped parsley 

Salt and pepper to taste

Sauté onions, and garlic until transparent. Add mushrooms and continue to sauté until cooked through. Add cooked lentils, broth and bring to a boil. Stir Greek yogurt and parsley and reduce heat. Add salt and pepper to taste.
