Ingredients

Here's what you'll need to whip up this delightful recipe:

  • 1/3 cup egg whites

  • 1/3 cup Greek yogurt I use Kite hill dairy free, it has tons of protein. Follow this link

  • I cup pure pumpkin

  • 1/4 cup pure organic maple syrup

  • 1/4 cup date or coconut sugar

  • 1 teaspoon vanilla extract

  • 1 1/4 cup oat flour

  • 3/4 cup oats

  • 1 teaspoon baking soda

  • 1 teaspoon Pumpkin Pie spice

Instructions

Begin by preheating your oven to 350°F (175°C). If you're making bread, lightly grease a loaf pan; for muffins, line a muffin tin with paper liners or lightly spray with cooking spray.

Mix Wet Ingredients

Add the egg whites, Greek yogurt, maple syrup, and vanilla extract to the mashed bananas. Stir until all ingredients are well combined, forming a creamy mixture.

Combine Dry Ingredients

In a separate bowl, mix the oat flour, oats, baking soda, cinnamon, and date sugar. These ingredients provide the structure and flavor, ensuring your banana bread or muffins are fluffy and delicious.

Bring It All Together

Gradually mix the dry ingredients into the wet ingredients, stirring until just combined. Avoid overmixing to ensure a light and tender texture.

Bake to Perfection

Pour the batter into the prepared loaf pan or muffin tin. For banana bread, bake for 35 minutes. For muffins, bake for 18-20 minutes. Check for doneness by inserting a toothpick in the center—it should come out clean.

:Cool and Enjoy

Allow the banana bread or muffins to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, slice and enjoy a healthy treat that’s perfect for breakfast, a snack, or dessert!

Tips for Success
